Pepper Mint Creams

Pepper mint creams are sugary minty sweets. They are very easy to make and there is no cooking or chopping involved at all, so a perfect fun activity to do with the children over the school holidays.

This is a very basic recipe, if you want to brighten up these pepper mint cream add a few drops of food colouring in, green is traditional but there is no reason to stick to green. Show of your artistic side and cut the mints into fun interesting shapes. Or make a cute little box to fill with mints for a thoughtful homemade gift.

Ingredients

  • 450g icing sugar
  • 2 tbsp water
  • ½ tsp peppermint extract

Method

  1. Sift the icing sugar into a bowl then add the water and peppermint extract, stir until it becomes a firm dough. If too runny add more icing sugar in, if too dry add more water.
  2. Dust a work surface with icing sugar and a rolling pin then roll the dough out. With cookie cutters cut out dough into shapes.
  3. Leave to dry on a tray lined with grease proof paper.
