Parsnip Crisps

Parsnip crisp are a great tasty treat for anyone who prefers savoury food. Parsnip crisps are slightly sweeter then potatoes crisp and make an interesting change, perfect for a lunch time side dish.

This is a great, straightforward, simple recipe; the only things in parsnip crisps are parsnips, if you want a little salt you can add some, but it is optional and the only other thing that is needed is oil for cooking.

Parsnip crisp are a cheap tasty recipe. If you are a keen gardener and have a few too many parsnips, parsnip crisp are nearly free to make and they are a great offering to your vegan friends, when you’re not really sure what to cook.

Ingredients

  • 3 Parsnips, cleaned
  • vegetable oil, for deep frying
  • 2 tsp sea salt

Method

  1. Cut the top and the bottom of the parsnip off. Use a mandolin or a vegetable peeler to slice the parsnips lengthways as thin as possible, and then dry the strips with a clean tea towel.
  2. Heat the vegetable oil in a deep fat fryer or a saucepan until hot about 180C.
  3. Add the parsnips and fry until lightly brown, remove with a slotted spoon and drain on paper towels. Season with sea salt.
