Mojito Jelly

Mojito is the perfect refreshing dink on a hot summer’s day and guaranteed to get you in the party spirit. Mojito is a rum cocktail, with fresh lime, mint and sugar, simple but perfect. For an extra touch of fun, mojito jelly will liven up any party, while looking delicious and elegant.

Mojito jelly is perfect as a dessert for a sophisticated dinner party or as a dessert appetizer served as a small jelly shot. The lemon and the mint are very refreshing while the light rum has a clean, sweet flavour and the sugar adds a touch more sweetness.

For those of you who have enjoyed a night fuelled by vodka jellies in your distant past, during those student days, mojito jellies is what you should have been doing. As well as having an alcohol content, they taste delicious, after all food should be enjoyed.

Ingredients

  • 300ml light rum
  • 300ml water
  • 200g sugar
  • 4 sheets gelatine
  • Handful mint leaves
  • 6 limes

Method

  1. Soak the gelatine in a bowl of cold water for 5 minutes.
  2. In a sauce pan boil 180ml water with the sugar, until sugar dissolves.
  3. Remove excess liquid from the gelatine and add to the sauce pan of water, stir until it has dissolved.
  4. Add the rum and mint, (save a few mint leaves for decoration) and simmer for another 5 minutes.
  5. Remove from heat and let stand for 20 minutes.
  6. Squeeze in the lime juicy and stir.
  7. Sift the mix to remove the mint leaves.
  8. Place a few pieces of shredded mint leave at the bottom of some small jelly moulds. Jelly moulds should be roughly the same size as a shot, a silicone ice cube tray works well.
  9. Pour the jelly mix in to the moulds, and leave to set over night.
  10. To remove easily from the mould place in a bowl of warm water then turn out onto a plate.
