Lamb Rogan Josh

Rogan Josh is a delicious hot Indian curry. Lamb is traditionally the main ingredient in Rogan Josh although you can use chicken or fish. The rich flavour of lamb is complemented beautifully with the spices and chillies in Rogan Josh and is the ideal meat for this curry.

Rogan Josh was a dish brought over to India by the Moghuls, the first Indian adaption of Rogan Josh was made in Kashmir. In Persian Rogan means oil, and Josh meaning hot, which is a perfect description of how it is cooked.

Next time you fancy Indian; this is a wonderful tasty recipe that tastes authentic. The great thing about cooking at home is that you know exactly what you are eating and you can make it as hot or as mild as you like it.

Ingredients

  • 600g leg of lamb, chopped into bite size chunks
  • 1tsp garlic, crushed and finely chopped
  • 1tsp ginger pulped
  • 1tsp turmeric
  • 2tsp ground cumin
  • 2tsp ground coriander
  • 3tsp garam masala
  • 2 small red chillies chopped
  • 3tbsp plain natural yogurt
  • 1 onion, chopped
  • 1 tin tomatoes chopped
  • 2tbsp vegetable oil
  • 1 handful fresh coriander leaves

Method

  1. Heat up the oil in a large saucepan.
  2. Cook the onions until soft, and add the ginger and garlic.
  3. Stir in all the spices, dried herbs and chillies, keep stirring.
  4. Add in the lamb and cook for 5 minutes on high heat until browned.
  5. Add in the tomatoes and mix well, cook for 5 minutes.
  6. Then add in the natural yogurt, stir and bring to the boil then reduce to a simmer, cover with lid and stir occasionally, it should take 1 ½ hours to cook or until lamb is tender.
  7. Add in fresh coriander leaves.
  8. Serve with nan bread and rice.
