Healthy Full English Breakfast

There are not many meals more perfect then a full English breakfast, the weekend isn’t complete without an indulgent fry up. However if you are trying to sift a few pounds and look after your heart, a fry up is off of the cards, but it is definitely not a reason not to have a hearty full English breakfast.

Put your trusted frying pan to one side, it is not needed. Grilling is a far healthier way of cooking and food still taste as good if not better. Choose lean bacon and low fat sausages, read the nutritional value on the back of the packet and also the ingredients, as well as being low fat make sure what you are eating is made from high quality ingredients, the sausages will taste better if they are.

Poach your eggs, if you don’t like poached eggs baking is still a far healthier option then frying. If you like mushrooms eat more mushrooms and less meat. Most of us need to eat more fruit and veg and for anyone who loves mushrooms or tomatoes breakfast is a perfect opportunity, fill up on the vegetables that you enjoy and eat a little less meat for a healthier breakfast.

Ingredients

  • 2 eggs
  • 4 slices lean bacon
  • 2 low fat sausages
  • 2 slices of wholegrain bread
  • 2 medium tomatoes
  • 2 large flat cup mushrooms
  • 1 tbsp olive oil

Method

  1. Trim any extra fat off the bacon.
  2. Instead of frying grill the bacon and sausages, toast the bread.
  3. Brush the mushrooms and tomato with a little olive oil and bake in the oven at 200C for 15 minutes.
  4. Poach the eggs, alternatively you can bake the eggs for 10 minutes with the mushrooms.
