Grilled Chicken Ginger Salad

Grilled chicken salad makes for a tasty lunch, wonderful made and served fresh, but also a great healthy pack lunch perfect to bring into work or school.
Grilled chicken salad is full of delicious fresh flavours; the sugar snap peas are crunchy, tender and sweet, the cashew nuts and sesame seeds taste great but also add lots of texture and the grilled chicken goes perfectly with ginger vinaigrette.

This salad recipe is very easy, apart from the chicken, everything is nuts or vegetables, best served raw, so it is very quick to make. Anyone who says they have no time to be healthy has no excuses with this recipe. If you have grilled chicken for dinner you could always cook some more for tomorrow’s lunch, but if not it will only take ten minutes to prepare.

As well as being low fat, this salad is full of ingredients that taste wonderful and are fabulous for your body. Spinach is high in iron which will keep energy levels up, it is high in vitamin A and C which are both antioxidants and help to mange cholesterol.  Cashew nuts are great for your heart; the majority of the fat they contain is oleic acid which is the same type of fat in olive oil that is known to reduce the risk of heart attacks.

Ingredients

  • 150g spinach
  • 85g grilled chicken
  • 30g cashew nuts
  • 75g sugar snap peas
  • 1 spring onion, sliced
  • 1 tsp sesame seeds
  • 1 tbsp ginger vinaigrette

Method

  1. Toss all the ingredients together and then drizzle the ginger vinaigrette on top.
