Gin And Tonic Jelly

For those of us who like to put our feet up and relax with a perfect gin and tonic this is the dessert for you. Gin and tonic jelly is a playful dessert, perfect to end a summer dinner party with.

Drink flavoured jelly has come a long way since student days of vodka jelly, when it was more about the alcohol content. For those of us who enjoyed vodka jelly, gin and tonic jelly is more elegant and grown up but still wonderfully fun.

Serve at the end of a dinner party with fresh berries as a beautiful dessert or a fun alternative to after dinner mints.

Ingredients

  • 4 sheets gelatine
  • 200g sugar
  • 300ml gin
  • 300ml tonic water
  • 100ml water
  • 2 lemons

Method

  1. Soak the gelatine for 5 minutes in cold water.
  2. In a sauce pan boil the 100ml water, add the sugar and stir until it has melted and add the gelatine and stir until it has dissolved. Remove from the heat and let cool for a few minutes.
  3. Stir in the gin and tonic then squeeze in the lemon juice.
  4. Pour into moulds or shot glasses.
  5. Refrigerate overnight or until set.
