Serves 4

Plantain looks a bit like a large banana and is a popular side dish and dessert in the Caribbean and throughout Africa; it is a staple in their diet. Plantain is green in colour, looks like a large banana, and goes black when it is very ripe. Green plantain tastes similar to potatoes while black ones are similar to bananas and are very delicious and sweet.

Ingredients

  • 2 plantain, green ones for side dish, black ones for dessert
  • 3 tbsp of vegetable oil

Method

  1. Peal the plantain. Cut each plantain segment in half lengthwise.
  2. Heat the oil in a skillet, until it is hot.
  3. Fry the plantain for 4 minutes each side, making sure they turn golden and do not burn.
  4. Use a paper towel to drain the oil of the plantain, and serve hot.
