Crab Fritters

Crab fritters are wonderfully crispy on the outside but tender, soft and sweet when bitten into. Crab fritters make excellent party food, they are quick, easy and taste fabulous. You could make them bite size and have them as finger food. They make a wonderful change from the traditional sausage roll or triangle sandwiches you see at parties and adds wonderful variation and flavour to any buffet.

Ingredients

  • 500g crab meat
  • 100g breadcrumbs
  • 3 spring onions
  • Ground black pepper
  • 2 tbsp fresh chives
  • ½ tsp Dijon mustard
  • juice of half a lemon
  • 110g mayonnaise
  • 2 eggs
  • Vegetable oil

Method

  1. Whisk the eggs then add all the ingredients and mix gently.
  2. Shape the mix into fritters whatever size you would like them.
  3. Heat oil in a frying pan and cook for about 2 minutes on either side until golden brown.
  4. Remove and drain on a paper towel.
  5. Repeat these steps with the remaining mixture.
