Coconut Macaroons

Coconut macaroons are delicious little chewy biscuits made mainly from desiccated coconut; the only other two ingredients are eggs whites and castor sugar. These simple biscuit are easy to make and only takes about 25 minutes including preparation time.

Coconuts macaroons is a great recipe to do with children, it is straightforward, they can get their hands messy, you don’t have to wait too long and they get delicious biscuits at the end. Coconut macaroons are an ideal lunch box snack wonderful for play time. If you manage to save a few for yourself they are perfect for when your friends pop round and go very nicely with a cup of coffee.

Ingredients

  • 2 egg whites, beaten
  • 100g castor sugar
  • 160g desiccated coconut

Method

  1. Heat oven to 180C. Whisk all the ingredients together.
  2. On a flat surface press the mixture down so it is 1 cm thick, then start cutting circles with a cookie cutter.
  3. Place the macaroons on a greased baking tray.
  4. Bake for 15 minutes until lightly golden.
