This is a wonderful simple tapas dish full of rich flavours; the wine and the chorizo complement each other perfectly.

Chorizo is a Spanish cured, smoked pork sausage. It gets its red colour and wonderful flavour from paprika in the sausage. When cooking chorizo you do not need any oil as it release its own oil that is full of flavour from the paprika. This dish only takes a few minutes to cook and tastes stunning, the flavours are very rich and warm. Chorizo and wine is a great side dish but also a wonderful quick snack anytime of the day.

This dish goes perfectly with fresh crusty bread, the red wine and chorizo juices are delicious and prefect for dipping bread in.

  1. In a frying pan fry the chorizo add the wine and let reduce.
