Chorizo And Pepper Soup

Chorizo is a cured Spanish sausage that you can buy in thin slices or as a sausage and is a wonderful ingredient to keep in the house. Chorizo is a red colour because it is full of paprika and other spices. It is delicious as it is, but added to other dishes it is magical.

Chorizo and peppers are perfect together; both ingredients are very popular in Spanish cooking. This soup is spicy and full of warm, sweet, rich flavours. Chorizo and pepper soup is simple and quick to make, perfect for when you are in a hurry but want something fresh, warm and homemade. Chorizo and pepper soup served with homemade bread is a delicious easy lunch and leftovers can be microwave for tomorrow’s lunch.

Whether you are cooking for one or a family of four this is a great recipe, perfect during the cold autumn and winter months. A delicious nutritious meal children will enjoy.

Ingredients

  • 300g chorizo sausage, sliced
  • 4 red bell pepper, deseeded and chopped
  • 1 litre chicken stock
  • 300g canned tomatoes

Method

  1. Heat a sauce pan, cook the chorizo until it release red oil, add the peppers and cook until tender, should take about 5 minutes. Then add the stock and tomatoes. Simmer until peppers are very tender.
  2. Blend soup with a hand blender or food processor until smooth, reheat to serve.
