Chocolate Truffles

Homemade chocolate truffles are delicious. Cream makes the chocolate truffles smooth and luxurious as they melt in your mouth beautifully. Make someone feel special, next time you think about buying a box of chocolates consider making them, it's very easy. All you need is dark chocolate, cream, a little bit of butter and cocoa powder and the results are delicious.


 A bottle of wine and homemade truffles, perfect for a quiet romantic night in.   

 
Or maybe help your children make some for their teacher. It is great fun, though the last stage can get a bit messy. Also the chocolate mixture might disappear magically before the truffles are made, so if you are guilty of licking the bowl you might want to make some more. The end result is delicious and whether you are 5 or 50 you will feel pretty good when people can’t stop telling you how amazing your chocolate truffles are.


Ingredients

  • 227g plain chocolate, 70% cocoa solids (chopped into small pieces)
  • 108 ml double cream
  • cocoa powder
  • 2 tbsp unsalted butter

 

 Method

  1. Put the chocolate in a bowl and set over pan with simmering water.
  2. Heat until melted and smooth, stirring occasionally.
  3. Remove from the pot of hot water.
  4. Add the cream and stir well.
  5. Put back on pot of hot water and melt the butter into the mixture, then leave to cool.
  6. Cover and refrigerate over night
  7. Pour out some cocoa on to a plate
  8. Take a heaped teaspoonful of the chocolate mixture and shape it into a ball.
  9. Roll each truffle in the cocoa powder, coat all over in an even layer. Shake off the excess and set on a tray.
  10. Continue shaping and coating the remaining truffles. Set on a tray, making sure they don't touch each other.
  11. Cover and refrigerate. Remove 15 minutes before serving.
