Chocolate Fudge

Fudge shops are almost irresistible, whether it is because they have a sense of nostalgia and bring people back to childhood or seem quaint and old fashioned the fudge is always deliciously sweet.

Homemade fudge is very yummy and one of the most decadent treats you can make, yet if feels comforting and completely unpretentious. Fudge is so easy that it is hard to go wrong and it will taste just as good as fudge from any fudge shop.

Fudge is also a wonderful gift; any homemade gifts feel very special but fudge taste fabulous, so makes a perfect thank you gift that is always welcome.

Ingredients

  • 125g Butter, softened
  • 1 tsp vanilla extract
  • 405g condensed milk
  • 120g plain chocolate at least 60% cocoa solid
  • 800g icing sugar, sifted

Method

  1. In a large bowl mix together the butter, condensed milk and vanilla.
  2. Place the chocolate in a bowl and set it over a pan of barely simmering water. Leave it to melt, then remove from the heat and stir with a wooden spoon.
  3. Allow the chocolate to cool but not harden and then gradually beat it into the butter mixture. Beat in the icing sugar, a little at a time until the mixture becomes a soft dough-like mixture.
  4. Line a shallow baking tin with cling film.
  5. Pour the fudge into the tin and spread evenly.
  6. With a knife mark the fudge into small pieces, refrigerate overnight.
  7. Remove from fridge and chop in to pieces.
