Chickpea Burger

Chickpea burgers are delicious; they are similar to falafels which is the fast food choice of the whole of the Middle East. Chickpea burgers are a perfect vegan and vegetarian recipe, chickpeas are high in protein, low in fat and a great source of dietary fibber. This recipe also tastes fantastic, the burgers are full of flavour, chilli, coriander, garlic and chickpeas, which add a rough, nutty, texture.

For vegetarians trying to cook a meal for meat eaters, chickpea burgers are a great recipe; they are very satisfying and taste great on a BBQ.

Ingredients

  • 2 x 400g cans of chick peas, rinsed and drained
  • 2 tbsp olive oil
  • 1 small onion
  • 1 garlic clove
  • 1 red pepper
  • 2 tbsp coriander, chopped
  • 1 fresh red chilli
  • Salt and pepper
  • Vegetable oil for cooking
  • 8 bread rolls

Method

  1. Put the chick peas in a food processor and pulse 2 or 3 times.
  2. Heat the olive oil and fry the onions, garlic and pepper for 5 minute until softened. Add the chick peas, coriander, chilli, salt and pepper and stir well. Cool in the fridge for at least an hour. Divide and shape the mix into 8 burgers.
  3. Heat the vegetable oil in a frying pan and fry burgers for 3 minutes each side, until golden.
  4. Serve in a roll.
