Chicken Croquettes

Chicken croquettes can be served as a starter, part of a Spanish tapas meal, or are wonderfully comforting served with a plate full of chips, mayonnaise and a slice of lemon. Chicken croquettes are coated in bread crumbs and fried. They are deliciously crispy on the outside; while the chicken filled centre is wonderfully smooth and creamy because of the milk.

Chicken croquettes are perfect to cook for children; the whole family can enjoy them together and unlike croquettes from a supermarket you know the quality of the ingredients and what you and your children are eating. Plus the flavours do not compare, fresh homemade chicken croquettes are very yummy.

If you are trying to think of easy finger food ideas for a buffet and trying to come up with something more exciting then pineapple and cheese on a cocktail stick this is a great recipe. Chicken croquettes are bite size and will go very quickly.

Ingredients

• 115g butter
• 2 tbsp flour
• 195ml chicken stock
• 100ml milk
• 500g ground cooked chicken
• Salt and pepper
• 1 beaten egg
• 4 tablespoon dry bread crumbs
• Oil for frying

Method

1. Melt the butter in a saucepan and stir in the flour.
2. Gradually stir in the stock and milk and simmer until the sauce is thick and smooth.
3. Stir in the minced chicken and season to taste with salt and pepper. Continue cooking on a low heat, until the mixture holds together.
4. Remove from the heat and allow to cool, then refrigerate for an hour.
5. With floured hands, form the mixture into little balls. Brush these with beaten egg and coat with bread crumbs.
6. Shallow fry in hot oil until golden brown, should take about 4 minutes.
7. Serve hot or cold.
