Makes 30

Melted cheese and bacon is already an amazing combination, add puff pastry and it is fabulous. These little cheese and bacon puffs are ridiculously easy to make, fantastic finger food for any type of buffet, particularly children’s parties and makes a welcome change from typical triangle sandwiches.

Cheese and bacon puffs are great for lunch, very satisfying and yummy, but you might want to make them slightly bigger.  Cheese and bacon puffs are often sold in bakeries for lunch, the pastry is normally cut into 14cm square and corners are brought into the middle to enclose the cheese and bacon.  These large bacon puffs will make a fabulous lunch for work tomorrow.

Ingredients

  • 375g ready-made puff pastry
  • 8 bacon rashers, diced
  • 200g mature cheddar cheese, grated
  • 1 egg, beaten

Method

  1. Preheat oven to 180C or gas mark 4.
  2. Roll the pastry out and cut in to 4cm squares, score a border 5mm in from the edge and place on a greased baking sheet.
  3. In a frying pan cook the bacon until crisp, transfer the bacon on to a paper towel and dab off any extra oil.
  4. Generously sprinkle the cheese on the pastry, within the borders, place bacon on top. Brush the edges of the pastry with the beaten egg.
  5. Bake for 15-20 minutes until risen and golden brown.
