Breakfast Yoghurt With Plum And Apple Compote

Natural yoghurt is a quick, easy, light breakfast and apple and plum compote adds delicious fresh sweet flavours to a simple low fat breakfast. As well as being delicious fruit compote includes one of your five a day and is a get way of encouraging children to eat fruit. Low fat yoghurt is also a great source of calcium. As well as being good for you, the fruit compote can be made ahead of time so no rush in the morning.

For a great start to the day and a very rounded nutritious breakfast enjoy a slice of wholegrain toast or roll with some salmon or peanut butter and finish off with this delicious yoghurt plum and apple compote recipe. This breakfast includes whole grain, protein, dairy and fruit a perfect start to the day.

Ingredients

  • 2 apples
  • 4 plums
  • 1 cinnamon stick
  • ½ lemon
  • 2 tbsp brown sugar
  • 75 ml apple juice
  • 120ml low fat natural yoghurt

Method

  1. Peel, core and cut the apples into small pieces.
  2. Cut the plum into small pieces and remove stone.
  3. In a sauce pan combine all the ingredients except the lemon.
  4. Great the lemon zest into the saucepan and squeeze lemon juice to taste. 
  5. Stir frequently, simmer until apples are soft and sauce like.
  6. In a glass place the compote and top with yoghurt.
