Breakfast Bagel

A filling breakfast will keep you going throughout the morning and is a great start to the day. A breakfast bagel is loaded with bacon, eggs and tomatoes; a perfect, convenient, warm, hearty breakfast.

Eggs and bacon are part of a traditional cooked breakfast and taste great. If you are short of time but enjoy a hot, filling cooked breakfast a breakfast bagel is perfect, it is easy, quick and you can eat it on the go. As well as being delicious a breakfast bagel can be a healthy nutritious breakfast. Instead of frying the eggs and bacon, this recipe poaches the eggs and grills lean bacon, reducing the fat content. A breakfast bagel contains whole grain, protein and vegetables, so you are eating one of your five a day and enjoying a balanced meal.

Ingredients

  • 2 bagels
  • 2 eggs
  • 1 tsp vinegar
  • 4 rashers lean bacon
  • 1 tomato
  • Lettuce
  • Butter

Method

  1. Grill the bacon.
  2. To poach the egg, boil a saucepan of water and a tsp of vinegar, crack the eggs in the pan, it should take about 5 minutes for the egg to cook, depending on how soft you want the yolk. Remove the egg with a slotted spoon.
  3. Slice the bagels in half and lightly toast the bagels on both sides.
  4. Spread butter on both halves of the bagels, place some lettuce on the bottom halves then the tomatoes and bacon followed by an egg on each bagel.
