Baked Eggs With Tomato And Chorizo

Baked eggs with tomato and chorizo is a wonderful simple Spanish breakfast.  Everything is baked together; the flavours from the chorizo soak into the eggs and tomatoes for a delicious, hearty breakfast.

Chorizo is a Spanish cured sausage; it is flavoured by paprika which gives it, its vibrant deep red colour and wonderful spicy flavours. Chorizo taste delicious as it is, but is a fantastic ingredient to cook with, it instantly species up a meal and adds a rich warm flavour. Perfect for breakfast in winter.

Ingredients

  • 1 garlic clove
  • 3 tomatoes, roughly chopped
  • 200g chorizo
  • 4 eggs

Method

  1. Preheat the oven to 180C.
  2. In a frying pan cook the chorizo until it release red oil; remove the chorizo with a slotted spoon. Add the garlic to the frying pan and cook in the chorizo oil, then add the tomatoes and cook until they become soft.
  3. Place the tomatoes and chorizo in 4 small oven dishes then crack an egg on top.
  4. Bake for 10 minutes.
