Asparagus Wrapped In Smoked Salmon

A wonderful appetizer that is simple, but full of flavour. The crisp asparagus goes beautiful with the soft, smooth smoked salmon. Asparagus wrapped in smoked salmon is delicious as well as beautiful. The colours are wonderful; they look and taste fresh, your guest will be impressed even before they start eating. 

This recipe is a variation on asparagus wrapped in Parma ham which is prepared in exactly the same way but with Parma ham instead of smoked salmon, both are equally as delicious and luxurious. If you are serving this at a party I also suggest serving strawberries wrapped in Parma ham, as the red and green look beautiful together.

Ingredients

  • 24 asparagus, stalks peeled
  • 24 slices of smoked salmon

Method

  1. Boil the asparagus for about 3 minutes, so it is cooked and tender but still firm.
  2. Cool under running cold water then dry.
  3. Wrap a slice of salmon around the stalk, leaving the tip exposed and room at the end, so it can be picked up.
