Aloo Sabzi, Indian Potatoes

Aloo sabzi is an Indian side dish of spicy potatoes. This is a quick simple dish that is full of flavour, turmeric, coriander, mustard seeds and of course chilli. The recipe is currently medium hot but if you like your heat you can make it as hot as you like; try adding a few fresh chillies in as well and if you like your dishes mild use less chilli.

Aloo sabzi is a very comforting dish with lots of warm flavours and potatoes are always very satisfying, a perfect dish for winter, when you have just got in from the rain. Aloo sabzi is a vegan dish, perfect if you are entertaining vegetarian and vegan friends, vegan food doesn’t have to be boring and everyone else will enjoy it.

Ingredients

  • 450g potatoes, peeled and cubed
  • 2 tbsp vegetable oil
  • 1 tsp turmeric
  • 1 tsp coriander powder
  • 1 tsp mustard seeds 
  • 2  tsp red chilli powder
  • 2 tbsp fresh coriander

Method

  1. Boil the potatoes.
  2. Heat oil in a pan and fry the mustard seeds, add all the other spices and herbs except the fresh coriander.
  3. Add the potatoes and stir until they are covered in spices, cook for 5 minutes occasionally stirring.  Add the fresh coriander and serve hot.
