I`ve just bought some marlin steaks as an impulse buy. I can`t remember if I`ve ever eaten it. Apparently it`s a bit tougher than swordfish. How should I prepare them to make them as tender as possible - marinate them?

You could get away with any tuna recipe. Marlin works really well with spice and citrus. Make sure you don't over cook, you want some translucency running though the middle.

Thanks Eccles. I might just marinate in lime and salt then. I was thinking they would be nice seared in lemon butter but I`m not sure how that would go with the lime and salt.
