Victorian Sponge cake

Hi

I need to make a square 14" VS. Can anyone tell me how many ounces of batter I would need? I prefer to make them in two shallow halves as opposed to one large one, as I find the larger the cake the more dense they become - taking ages to cook?

Meg, wasn't far off regards x quantities there if you look at the middle and end collumn for 13 '' square cake ... not far off your 14'' cake size! So basically as said ... Usual Victoria sandwich recipe x 4 halved in to your 14'' sandwich tin just up to half depth in each ... any over ... little buns! http://www.lindyscake...ake-recipe-quanities/

It will be double the amount shown in normal recipes as they are usually for 7" round tins....... also do you know the trick when using two tins to get them both the same size? Put each tin on the scales as you put the mixture in so they weigh EXACTLY the same.
Hi meg,
try making the norm recipe for Victoria sandwich x four quantity & fill to half way of your 14'' square cake tin each time. Not sure on length of time to cook for though, go by normal cooking time given for recipe & keep checking for colour & firmness plus skewer test!
P.s ... if you have cake mixture over, make some little buns with it.
