I have been asked to prepare a rice salad for about 20 people, anyone out there with an easy tested recipe?

I finely chop some onion, peppers and celery then saute in a good amount of olive oil with some garlic. Once cooked, add some frozen peas, a tin of sweetcorn and a couple of tins of good tuna. Cook some rice in a seperate pan and cool slightly then add to the mixture. Season to taste and add a little more good olive oil and fresh parsley. I find this very versatile as you can add whatever you like to the final mixture. To bulk it out a little I often add some chopped chicken and maybe a few prawns.
All I know is there's never any left!
Boil the rice, let it cool (in the fridge) and add the following:
A drained, chopped tin of oranges
A handful of salted peanuts
A chopped green pepper
A chopped onion

You can experiment which how much of each you want to put in, then bind it together with french dressing

Maybe peas, sweetcorn, kidney beans, peppers, red onion and for a bit of meatiness, some chicken or prawns? Not too heavy a flavour as it's a salad. Make your own dressing with olive oil, balsamic vinegar and some soy sauce.

I've got a recipe for a Christmassy one that is truly gorgeous! I often make it, and it's easy but unusual, and always a success, honest!! It doesn't have to be avoided in the summer - don't really know why it's for Christmas other than that there are cranberries and nuts in it. These quantities are based on rice (or couscous) for 8. Just add the following:

Juice and zest of one lemon
3oz dried cranberries
3oz chopped, dried apricots
3oz chopped dates
2oz chopped Brazil nuts
4 tbsp chopped parsley
2 oranges, peeled and segmented

Dressing:
6 tbsp olive oil
2 tbsp balsamic
S & P

(You can soak the dried fruit in the dressing for a bit while you do the rice.)
Put in a tin of mixed beans, red peppers, onions, and make it a bit spicey. Sorry I dont have my sisters recipe. It will have a mexican look about it. Add a touch of tumeric for colour.
