pak choi

I have a bed full of baby pak choi ready to be eaten but what can i do with them as i have never cooked them before - i believe i can steam or stir fry them but does anybody have any quick tasty recipes i can use them in? Many thanks

I usually stir fry it with a little chopped ginger and garlic.It's nice with some chopped bacon added too.It's a great accompanyment to chicken or pork and mixes well with noodles when you stirfry it
Try heating a heavy pan as hot as possible, adding a bit of oil and adding some pak choi (dont overload the pan). Stir quickly and after about 20 secs splash in a bit of cold water (a couple of tablespoons).
This will make loads of steam, lots of noise and possibly some tall flames. The water will evaporate quickly and once you've seasoned the leaves and drained them (squished between a tea cloth) they will taste nice and smokey.
served as a soup chicken stock and pak choi simple . you can toss in a few prawns , chilli, fresh herbs
