Chop an onion and cook in butter till soft. Add a cooked diced potato and 500ml veg stock, cover and simmer 10 mins. Add 350g chopped broccoli and cover, simmer another 15 mins. Blend then reheat. remove from heat and stir in 50g crumbled stilton (or more if you're a cheese fiend) and 4tbsp creme fraiche. I use low fat creme fraiche so as not to feel too guilty about the cheese. Season to taste.
