How do we know that there are more than 100 billion galaxies in our observable universe?

Extrapolation from sample fields and estimation.
We don't, but as LG states it's a good guess based on the observable density...

It seemed embarrassingly obvious after I'd read the answers, oh well, it was an early start today!
We counted the number of stars and then divided by 5,000,000,000,000. But there may be more beyond the visible horizon.
