Nice recipe.
Get some mash and some veg going
Oil a pan cook pork put on sepreate plate

Then put the following into the same pan

cut ordinary 2 eating apples into 18
cut onion into strip like pieces

do these for 5 mins till apple is soft
then put in
3oz of boiling water with chicken stock cube
2 teaspoons wholemeal mustard
into the pan

sitr then put the pork back into the pan stir this for abouyt 10 minutes

serve mash veg and pork and apple & mustard pork

Sounds good but.....i always put the mustard and apple in my mash.


Do the mash as normal, when done, add apple sauce, mustard and lemon juice to the mash. I always put garlic, some finely chopped onion and occasionally a bit of chilli into my mash.


This is served with pork loins (boneless) in coconut sauce........


Brown the pork (i use two pieces each) in a frying pan with some garlic, ginger and a tiny bit of chilli. Then add a can of coconut milk and simmer. I also put in some mushrooms, peppers and spring onions along with some lemon juice and a pinch of brown sugar to just sweeten it a little.


I simmer this fairly rapidly (stirring frequently) until it reduces. Just before the end, i add a little double cream and reduce further until the sauce is as thick as you like it.


Serve with the mash
