Hi, have just picked my first onions. Do I need to let them dry out before use? ta

No, you only need to keep dry the ones that you store before using.

It all depends on the onion and the surrounding humidity....
Hang up the spares by their long green shoots so they are in dry air. If they start to go mouldy or soft, throw them away. Or pickle them as soon as you lift them!
