Jacket Potatoes!

Hey all!

I am a jacket potato lover, and would like to know what you like on it or in it.

Tend to always have cheese and beans or just melted cheese, but looking to be inspired as it gets a bit boring after a while!

tuna and small amount of low fat greek yoghurt as I don't like mayo. Top with chopped chives.

Spag bol or better chilli beans, (left over chilli con carne)

I do love tuna mayo, especially with sweetcorn, will have that more often.

Never thought of that one before, and I love spag bol, so that is definitely going on my list of ones to try!

daniela, it is strange, I love pasta, and adore cheese, but have never liked macaroni cheese lol! Do like spinach though!

Tonight I was thinking I might cook the potato, take out the middle and mix it with cream cheese, red onion and sweetcorn and then put it back in, sprinkle some cheese on the top and put it in the grill!

Oh, one other that I love and would definitely recommend, loads of butter, and sweet and sour chicken, it is gorgeous!!

I like chilli particularly but love jacket spuds with just about anything

Otherwise I/family like - in no particular order/combo

butter
sweetcorn
chopped ham
melted cheese
baked beans
coleslaw
chicken tikka masala
scrambled egg
bolognese/meat sauce
chinese stir fry

Tuna, sweetcorn, mayo & cheddar cheese - aka the traditional tuna melt

I brush outside with olive oil and some sea salt, cook till soft inside, then I scoop out the inside, and mix with grated cheese,whole grain mustard and pieces of chopped cooked bacon.

Then put the whole lot back and grill/bake a bit longer.

And no-body has said my favourite..... got to be cauliflower cheese and crispy bacon. Well thats tonight's dinner solved.

Cut 2 or 3 rashers of smoked bacon into approx 1cm pieces, fry with a little oil and 3 or 4 sliced mushrooms. Add a can of baked beans, heat, and stir up with the cooked bacon and mushrooms. Nice.
