Can anyone tell me some easy recipes to start making fish sushi and any other sushis you may know. I assume the fish must be very fresh. What other fish can I use apart from salmon? What is the dark green stuff that they wrap sushi in and where can I buy it? Can I buy wasabi anywhere and ginger. Any web sites etc would be most welcome. Many thanks, Bramleyboy

Sushi grade fish has been frozen, to kill any parasites. Ask your fishmonger for sushi grade fish.

Waitrose stock it. I would be surprised if you couldn't find it in the World Food aisle in Tesco too.

It would be a good idea to start with simple vegetable sushi,then progress to cooked fish when you have grasped the basics. Here is a good introduction to vegetable sushi.
