Freezing Lemon Zest And Juice

Has anyone tried this please?

I have a glut of lemons and can't use them all at the moment but would like to save the grated peel and juice for baking cakes next month.

I can't see why not on either count.

The zest will be quite high in oil so should be fine.

Grate onto baking paper or grease proof and open freeze before containerising would be my approach

Is Answerbank really really slow for you all this afternoon, my answers are taking forever to submit! Why is it so slow?
I imagine you could also freeze the lemon as wedges or slices.
I freeze whole lemons, they are much juicier when defrosted, although the rind isn't as good for grating.
You can freeze the lemons whole and grate the peel of the frozen fruit into anying which calls for lemon zest. As for juice just defrost one when the need arises,cut and aqueeze.easy!

Thanks masterchef I really didn't know you could freeze whole lemons. Well pleased now! :)
I always end up with too many fresh lemons so I either wedge them or slice them thinly, freeze on a tray and then bag them and use them mainly win a g&t. You don't need ice cubes and it looks pretty too. Also do the same with limes and oranges, put a few in a jug of water if you have friends over, keeps it cool, tastes nice & looks pretty.
