I'm cooking for this weekends folk festival. Thinking of doing some thing with sweet potato. Is it possible to boil, then freeze them, then fry them when they've thawed out?

In a word, soggy
They cook really quickly anyway.
To contine, found with sweet potatoes, if frozen then thawed, to fry you have to watch them because the sugar content causes them to burn quickly, before they go crisp.
Not a good idea to freeze them Carrust. But, you could boil them the day before and store in the refrigerator then fry the next day.
They also need far less boiling time than white potatoes.
