I have inherited a genuine Le Creuset casserole and it is discoloured inside. How can I clean it and return it to white safely? I don't want to it to taste afterwards.

The discolouration is just the pan becoming 'seasoned' through constant use - it builds up a layer of natural oil that improves the non-stick quality of the pan. It might not look the best, but I'd leave it there personally.
If it's cast iron, it's has a white enamel finish. If it's ceramic, it has a white glaze. In both cases this finish is a type of glass. The glass has become stained, and, unfortunately, nothing you can do will restore it to its original appearance..
I used to put a water/bleach solution into mine.
