I need a recipe for dinner tonight - or maybe i can just chuck it all in! I have left over cooked chicken and lots of various vegetables and a tub of creme fraiche. i wanted something to have with noodles?? ( i usually do a stirfry with plum and hoi sin sauce-without the Creme f.- but just found i dont have any sauce)

Ingredients
2 Tbsp oil or butter
4 med. (150g) Chicken Breasts
125g sliced (1 1/2 cups sliced) mushrooms
1 peeled and finely chopped onion
1 Tbsp French or Dijion is nice here prepared mustard
250g pottle Creme Fraiche
salt and pepper to season



Method

1. Heat half the oil or butter in a frying pan and when hot, place the Chicken Breasts in skin side down first. Cover with a lid and cook over a moderate heat for 5 minutes.
2. Turn over and cook a further 5-7 minutes or until the chicken is cooked. Set aside on a plate and keep covered.

3. Add the remaining oil or butter to the pan and when hot, stir in the mushrooms and onion and cook over a moderate heat, stirring regularly until the vegetables are softened.

4. Stir in the mustard, Tararua Creme Fraiche and bring to a gentle simmer. Return the chicken to the pan, cover and heat through for a further 1-2 minutes. Season well with salt and pepper.

Serve with vegetables.

1. Make soup with the whole lot

2. Make bubble & squeak with the veg. If you have any curry powder you could make a creamy chicken curry.

3. Make a chicken & veg omelette

4. If you have any pitta bread or tortillas, heat your ingredients up, put them in the pitta or tortillas(wrap) and serve with a dollop of the creme fraiche
I would personally make a garlic sauce with some onions and the creme fraiche and then just throw in the chicken and serve with noodles and veg! Yum

sorry i may not have been very clear - its only the chicken thats already cooked. I am good at what i call basic traditional stuff, but i have kids that all prefer different meals and i said i'd do a stir fry tonight, i know i need to do something with noodles or rice or pasta. all suggestions are very good but not sure they are right for tonight. Does a creme fraiche based sauce go with noodles?
