Did I miss something somewhere or are they not going to bother explaining what happened to Brian and Kurt? And can the show cope with losing them?

No it can't, they were the only reason to watch it and now they're gone. I'm deeply upset.
as far as i am aware there are no plans to explain the deaths of brian, kurt and the english teacher, i think thats the point, why should they? and yes they can cope without them i am working in the same building that this series is being edited and trust me it gets much, much better after the first couple of episodes. you wont be dissapointed
It seems to me as if rather than replace all the main characters they're getting rid of half in one season and bringing in new people,(main character going, Brian and Kurt becoming new main characters, Penny and the fat one coming in) then scrapping the last of the old people and bringing in more new people(Brian, Kurt and the woman with brown hair are axed, three new men come in, and Penny and the fat girl are the new main characters), as a sneaky ploy to completely change the cast in a way where fans of the original keep watching because they always see familiar faces.
