Easter lunch/dinner?

just back from a morning at the park where we had coffee and crepes.

lunch will be hot cross loaf

dinner is roast pork, cauliflower cheese, tender stem broccoli and dauphinois potatoes 

finishing with a peach tarte tatin

I've got lamb shanks, marinated in red wine & stuffed with rosemary & slithers of garlic. Usual trimmings followed by apple crumble & custard.

 

Lunch will be what was left of the bowl of curry I didn't have last night (I was full after a couple of forkfuls) and dinner is a Wagyu burger (or probably half of one).  I seem to be suffering from early satiety over the last few days.

I had considered lamb as I have a huge leg in the freezer Sharon but it's a lot for 2 people.

Can't cope with a joint a.t.m. and there are only 2 of us, so 2 very nice-looking pork loin slices probably with roasties, roast carrots, peas and proper onion jus.  I'll be prepping in short bits throughout the day.  :)

Salmon with asparagus, peas, runner beans and baby new potatoes and a lemon and dill sauce. Easy to prepare and serve doesn't involve too much standing. 

Traditional leg of lamb with garlic and rosemary,roasties,and veg,with a nice gravy made with the juices ,some port and redcurrant jelly. Apple cinnamon crisp for pudding if we can manage it or we'll have it later for supper. Only three of us so the left over lamb will make a nice curry for later in the week.

roast chicken,roast potatoes and parnips,broccoli,carrots and sprouts, no alcohol to washed it down with!!

Ham salad sarnie in a few minutes & brisket, roasties & whatever veg I can find in the freezer for this evening.

Living the forgot-about-Easter dream...

Lunch was Butternut squash rigatoni - too early to think about supper.

As someone who hates cooking I will say I'm doing roast leg of lamb with Aunt Bessies roasties and yorkshire puddings, frozen peas all with mint sauce for me and gravy for him. I know it will be delicious (despite the mainly convenience elements) plus cold lamb tommorrow gnawed off the bone which is possibly even nicer.

Very true Red, my lunch was one such.

Son's doing an orzo, chicken and tomato concoction. Looking forward to it, especially the Caipirinhas beforehand.

I really want a Caipirinha now ... or an Aperol Spritz would do ...
