Sweet Potatoes

Hi all, I'd like to start eating more sweet potatoes to replace my daily fix of normal spuds. However, despite trying them several times, i've never cooked them.
Any suggestions? Also, can you eat the skins?

You can mash them, make chips with them, (very nice) slice and fry them, mash them with potato, swede or turnip, a little bit of black pepper, don't really need salt, although you can add a little if you wish, bake them, don't eat the skin though, not so tasty. Serve them instead of potatoes.
Yes you can bake them very tasty too.

They cook really quickly. Bake them then scoop the flesh out. I recently had sweet potato chips and they were lovely.

I eat the skin of baked ones
Nice in soup too with lentils, coconut milk and a spoon or two of Thai red curry paste.
Use them as you would the standard potato. You can eat the skins, but if not keen it's not obligatory. I found them a nice change but consider standard potato chips superior to sweet ones. Chips ought not be sweet.
