Hi all, I'm gonna make some chocolate cup cakes and a friend of mine said she always makes her cakes in the same way (Weigh eggs then put equal amount of flour and sugar) - adding cocoa if wanting chocolate etc...

Now does this work? (I'm not very good with cakes) she says it does, but I can't find a recipe that uses equal amounts like this and I've never seen her cakes so they might not be very good!

Also I'm not sure to use self-raising or plain flour and/or add baking powder!

cakes = 4oz self raising flour, 4oz butter, 4oz sugar and 2 eggs

this one works every time for me!.....6oz SR flour, 6oz butter or soft margarine, 6oz castor sugar, 3 eggs and 1 and a half teaspoons of baking powder......add all the above to mixing bowl, beat well, at least 3 mins, fill baking cases to half full and bake at 180 degrees in centre of oven for approx 20 to 25 mins............(if making chocolate, substitute 1oz of flour for 1 and a half oz cocoa).......cool and decorate!...
Pinky, sorry, meant to add that this makes 24 fairy cakes or 18 larger cupcakes...........

Ahhh welshlibranr wish I had read your before attempting mine! They were ok, but filled far too full and they didn't rise. I didn't put enough baking powder in!

A plain flour would be better to use and make sure to clean that thrice using a net based vessel.
