I-pod touch dowloading photos

Could someone please tell me if there's a way of selecting which photos you can transfer to your Ipod as at the moment I can only see all or nothing!? I don't want my entire photo collection, I only want the good ones - surely you can hand pick some? I just can't see how!

In Windows I think you simply have to put the photos in certain folders, then choose the folder you want to sync in iTunes.
