Delicious, cooked slowly for a long time, so I'm told. In cider is nice.

Ladybirder it's marinating in a orange and tarragon whole grain mustard overnight then in the slowie on a bed of leeks with a good slug of Apple juice (I drank the cider) and a chicken flavour pot (those jelly like stock things). Will go on around 9am for dinner at 6pm
Should be nice mandi, many years ago I worked on a Cambridgeshire butchers market stall in Stevenage as a Saturday job, he sold fresh meat as well as traditional cooked meat - ham carved of the bone, haslet etc
As well as cooked pig cheek, one guy wanted meat carved from bone and still pay the same price per lb as it was on the bone lol
It used to be so cheap but has now become all the rage at posh restaurants apparently hence it is sometimes in short supply and of course cost a lot more.
Agree Ladybirder so many celeb chefs doing "wonderful" things with cheap cuts - might get some shin tomorrow

Carrust can't do tripe because of the way it is treated, but ox tail or neck of lamb delish
It's all a con. Offal, once the preserve of the peasants, is now haute cuisine. I often buy ox liver at 40p per pound, which, when fried properly, is more tasty and more tender than the finest sirloin steak.
Agreed black - just the knowledge of how to cook offal
Chicken livers cheap as anything and delicious!
I'd still rather have a steak though.

I haven't Tony,am sure I would like that - love the flavour of the livers all juicy and pink.
Shin beef slow cooked with onions and celery is lush.

Shin beef, or stewing steak, or hough, is delicious. Wouldn't use celery, though. Like it raw but cooked it is too overpowering and taints the other ingredients.
