it's not very funny but he bought 2 fish and one of them smelled, so it could be said that he had 3 fish, with the "smelt".

Kind of like:
a man bought 2 indetical apples but when he got home he had 3 pieces of fruit...why?
He had 2 apples and a pear(pair).

It's a play on words but it isn't very funny.
