Does anyone know why those online car insurance quotes ask how many cars you have in your household? Is it so they can drum up more business if they know you have say three cars in the household? Or is there some technical reason that affects the quote? Thanks

Possibly - they can market to you re the other cars, and some insurers offer multi-car discounts.
possibly also so they know how you will use the vehicle you are insuring - if you own a mini and a van, then its highly unlikely you will ever use the mini to run your building company.
maybe also so they can cross reference insurance policies?
and also so they know which will be stored in the garage etc.

but yes its probably mostly just to try to sell you more insurance
