Does anybody know - would cutting my stock seat belts off have anything to do with the brake warning light?

What year is your VW?

Where have you actually cut your seat belts?  Have you removed the seat belt stalks?

If your VW has an airbag then some cars have what's called 'Supplementary Restraint System' (SRS).  On some cars this includes a special seat belt stalk that is spring loaded.  In an event of an accident it 'goes off' and tightens the seat belt and therefore takes up the slack.
