Low brake fluid level, defective/stuck handbrake warning light switch, defective brake fluid level sensor, worn front brake pads ?

But not necessarily in that order !

When that happened to me I was leaking brake fluid and needed it topped up and new brake pads too

When the same thing happened wth my Polo a local VW specialist told me it could be a brake sensor on one of the wheels temporarily malfunctioning or a piece of grit lodged between the pads. I was told to drive the car slowly in reverse for about fifty yards. It worked ! The light went out after about 30 yards.

Better check that you are not losing brake fluid first.
