What word would be best used for a person who snaps back answers in a defensive way when you ask them something, rather than simply answer the question. I keep thinking Reactionary is appropriate, but I know that reactionary means something different in a person.

Brilliant answers all, I think the best is Retaliatory. I am having to soon offer some feedback to a colleague who has been a peer until recently but has just taken on a position above me. They are aware of their habit and we have discussed it before, but as friends/equals. I'll politely offer the opinion that Retaliatory responses are still unacceptable, despite their recent elevation in status, and even especially because of said elevation.
Aggressive/attitude problem/misery- I can think of a few here from time to time actually, did that inspire you at all?
Brave but daft.
