yep, you can do a search for a particular item and save the search and ebay send you an email every time it comes up for sale

Go to 'My Ebay' and look down the left-hand table. Click on 'Want It Now'.

Search for the item/s you want to buy.
Look at the top right of the list of items,and you will see
"Save this Search"
Click on it,and you will get a drop down box which will offer to email you whenever any of the itmes you are searching for are listed.
You can choose(up to 12 months) how long to have the emails sent to you.
You can also have more than one saved search,I have six at the moment.

"Want it Now" is OK,BUT it depends on Sellers looking through Buyers requests,whereas the Favourite(Saved) Searches are automatic and email you.
I use Saved Searches all the time,and find it very useful.

I agree with In a Pickle - I once put an item in Want it Now, and got all sorts of emails saying they had one [a rare-ish book] which i didn't reply to. Best do a saved search.
