Cauliflower soup

Have just googled but have a recipe already'
Brother-in-laws gorgeous recipe, but checking that its all ok folks.

He said --

4 small onions chopped
2 clove of garlic or teaspoon full
2 large carrots sliced
1 cougette
3 med potatoes
tespoon mixed herbs
2 chicken stock + 1 beef stock
tub single cream or milk
salt and pepper to taste
half a cauliflower

How would you put it all together from start to finsh........

How I would do it

Heat a bit of oil in a pan, add onions, carrots, garlic (crushed), let them cook for a couple of mins, add the stock and bring to boil, turn to simmer and add potatoes (chopped), cauli, herbs and salt and pepper, leave to cook til veg is soft, when done, give it a whizz if you like it smooth then add cream. I think that soup will be lovely, might have a go myself.

Cheers rocky. its absolutely delicious as we had some while in Spain.
he said to blend it all. How would you do that , as there is quite an amount of it.
Bought blender y/day never used one before. any ideas please?
I sound rather stoopid but its all new to me x
Be careful with the blender, let the soup cool down a bit before blitzing else the top may come off and the soup fly out, don't overload either, I probably would do it in batches, half a blender at a time. Just pour it in and give it a whizz.

You're not stoopid, until you use one, you won't know how to use it.

Many thanks rocky, will let you know how it all turns out.

Hopefully will do it all tomorrow as I've been sneezing and coughing all day so will feel lots better tomorrow maybe.

Did you buy a stick blender?
When I make cream of cauliflower soup, I always add 1/2 to 3/4 cup of grated Cheddar cheese. You might want to try that, pusskin.
Might give this a try if you don't mind it sounds good. How much water do you reckon needs to be added to the stock cubes? Thanks.
Make the stock in a separate container, and just add cubes to the boiling water until you achieve the desired taste.
Not sure if I'm not looking hard enough but I can't see anywhere how much water needs to be added to the cubes. Thanks
An oxo is usually a third of a pint I think.
Thanks Rocky. Do you not think that maybe 1 pint of water to 3 stock cubes would taste a bit overpowering in a soup. Also with all the aded vegetables would it not make it a bit thick. Not that I'm an expert LOL but just a thought. Thanks

Oh good More replies.

Brother-in-law says to cover all veg with water, then add chicken and oxo cubes.
He had a big casserole full of it, was lovely sight to see and smelt delish!
It really was the best soup ever and surely nothing can go wrong x lol

If too thick, add more water?My tongue is hanging out and I havent cooked yet!!!
I think that pusskin indicates 2 cups of chicken stock plus 1 cup of beef stock; so, 3 cups of boiled water, and then add cubes or powder to your taste. Actually, I wouldn't think that 3 cups of stock is enough for the quantity of ingredients she is using. However, she says her brother makes it this way, so it must be ok.

B/I law says to cover all veg, so no amount of liquid mentioned.
Will add cheese, and I will be using an electric hand blender.
Would be nice to know if any of you try this soup.

Coriander, I think 3 cubes to one pint might end up too salty. Soup is as you want it, play around with quantities til you get it how you like it, remember t's better to add too little as you can always add more, you can't take it out.

Hi Abers, before I make soup, I left out one ingredient!

One large pinch of chilli powder! Would it make much difference if i left it out?
Never used chillies before.
Hoping to make soup later today, fingers crossed x
