After consulting my sister, she said she always weighs her eggs. So I used the 6-6-6 oz method with three eggs. I weighed the eggs (7oz) and then, as she instructed, made up the difference with the flour as in 7oz s.r. flour (sifted, with 1 and a half teaspoons baking powder), cooked at 160fan for about 25 minutes and hey presto, a nicely risen cake to be proud of! Thanks to everyone for their suggestions - I naively blamed it on my new tins.

The secret to a good Victoria sponge is to whip the eggs and sugar until they are almost white - this takes approx 5 mins

hi ojread2, you say whip eggs + sugar til almost white, what about the butter? do you mix in the butter afterwards?
i cream the marg and sugar till it turns white,then add one egg with a little flour at a time then fold in the last of the flour.people kiss my feet to scoff my cake

Easiest Victoria Sandwich Recipe Ever!
200g caster sugar
200g soft butter
4 eggs,beaten
200g SR flour
1 tsp baking powder
2 tbsp milk

Preheat oven to 190 degrees
Put all ingredients into a bowl all at once and beat to a smooth mixture. Divide between 2 sandwich tins and cook for 20 mins or until golden.

For the filling mix together 100g soft butter,140g icing sugar and couple drops of vanilla essence. Spread on one side of the sponge when cool, spread the other with raspberry jam and put together. Sieve icing sugar on top. delicious!
mojay,i also tried to use this recipe from another thread or website, and was a disaster, have you tried it yourself? Are electric ovens not very good, because thats all ive got.
weigh eggs, and weigh out butter and flour the same weight, mix dry ingredients together, then add butter and cream with spoon! then stir air in!

opening oven door too early CAN cause the sink!

no, p/nose, I did intend to try it but have just remembered I took it from the halogen oven site - which could affect the timings.
Do you weigh the eggs in their shells or as liquid ? scuse the ignorance!
